black bean quinoa cakes

Did some experimenting in the kitchen today. Nap time has become the vegan cooking hour in my house. They came out very tasty and very filling! I also made a spicy sauce to drizzle over them.

cake mixture
1 15 oz can of black beans drained and rinsed
2 teaspoons olive oil
1 tablespoon Bragg’s
1 teaspoon lemon juice
1 cup cooked and cooled quinoa
1/2 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon thyme
1/8 teaspoon cayenne pepper
1/4 cup bread crumbs
1/4 cup nutritional yeast
1 tablespoon whole wheat flour

Preheat oven to 350. Cook quinoa and cool to room temp. In a large mixing bowl mash black beans with a fork or potato masher until you have a chunky paste. Add olive oil, Bragg’s, lemon juice and spices and mix well. Add quinoa and the remaining dry ingredients until well blended.

breading
1/2 cup bread crumbs
1/4 cup corn meal
1/4 cup whole wheat flour
1 teaspoon salt

Spray a baking sheet with olive oil. Mix ingredients for breading in a bowl. I usually will wisk the dry ingredients to make sure they are well blended. Take small handfuls of bean mixture and form a ball then flatten into a medium sized patty. Coat with breading mixture and place on baking sheet. You should have enough for 6 medium sized patties. Bake at 350 for 10-15 minutes then flip cakes over and bake for another 10-15 minutes. If you want really crisp cakes finish in a sautee pan with a little olive oil until browned on each side.

spicy sauce
4 tablespoons of vegenaise
1 teaspoon lemon juice
1 teaspoon hot sauce
1/2 teaspoon cumin
1/2 teaspoon paprika

Wisk ingredients together until well blended and serve with cakes. If you are pouring sauce over cakes, don’t do so until cakes are served or they will get a bit soggy. You can also just serve it on the side and dip as you like.
